Greek Chicken Stuffed Zucchini Boats.
As promised, I am excited to share some delicious and healthy recipes I’ve been making in the kitchen! This is one I tried on Friday evening, and it was quite easy and very tasty. In order to reduce the amount of carbs consumed, I actually substituted out the chickpeas for fresh corn. This made the recipe a little lighter, which I appreciated as I don’t have a big appetite these days.
