• Seafood Pasta Recipe

    So, I was in Boston a few weeks back which always gives me a bug for eating seafood but of course those gorgeous buttery lobster rolls just aren’t something you can treat yourself to on a regular basis unless you want to make an enemy of your arteries. I looked for some simple healthy alternatives and had a go at this really easy and tasty seafood pasta dish that is so versatile to adapt to what you like, plus there’s the added bonus of all the healthy nutrients, oils and vitamins you can get in seafood (interesting article here about that >  https://www.healthline.com/nutrition/11-health-benefits-of-fish#section5 ).

    We’re experiencing a mini heatwave in the UK at the minute so we thoroughly enjoyed eating this at home on the patio for lunch. Also, added a bit of feta and lime juice to the finished recipe which complimented the paprika perfectly. And to top it off, we used homegrown fresh tomatoes and onion which makes everything feel all the more worth it. Side note, I used vegetable stock instead of chicken stock because I don’t know why, that feels to make more sense than using a meat stock for fish, but let me know how you get on.
